The Guide currently uses a mix of "Unix" and "UNIX" stylings. This PR makes them all "Unix", which seems to be the more modern usage.

I agree with this change for legal reasons.
"UNIX" written in all caps is a registered trademark but "Unix" and "Unix-like" are not.
