Update plausible.yaml and shlink.yaml - clickhouse config contents were swapped; fixing double https:// issue in shlink web app

Changes

• Clickhouse Config content were wrong in the plausible.yaml. The content had to be swapped in order to work correctly.
• Shlink had double "https://https://" before every short link. Changes fixed that.
